XOCOLATL means Bitter Water in Nahuatl –the language of the Aztec empire-.
This beverage was made by grinding up seeds from the cacao tree, mixing it with water and spices – including chili peppers – then pouring the drink high up from one vessel to another, raising the foam that was so prized for them. It did not have sugar in it and was probably very bitter indeed.
Chocolate has been a beverage of the elite, whether of brown-skinned Aztec nobles or pale-skinned Jesuit clerics. With the downfall of the Aztec empire, we enter an era in which chocolate-taking was transformed by the Spanish conquerors, and even new terminology invented, including the very word chocolate itself.
