XOCOLATL means Bitter Water in Nahuatl –the language of the Aztec empire-.

This beverage was made by grinding up seeds from the cacao tree, mixing it with water and spices – including chili peppers, vanilla, and cinnamon – then whisking it until it became frothy. It did not have sugar in it and was probably very bitter indeed.

Chocolate has been a beverage of the elite, whether of brown-skinned Aztec nobles or pale-skinned Jesuit clerics. With the downfall of the Aztec empire, we enter an era in which chocolate-taking was transformed by the Spanish conquerors, and even new terminology invented, including the very word chocolate itself.
